Eggless Jam Swirled Muffins

For this month's Baking Eggless Challenge,Priya of 'Priya's versatile recipes'  suggested this wonderful Jam swirled Muffins from Technicolor Kitchen.The original recipe had 2 eggs and I used yogurt as egg replacer.I didn't had store bought jam on hand,so made some strawberry jam and used it in the recipe.Since I didn't add any colour in my jam the muffins were not too colourful as I expected but they were very soft and tasty.

Ingredients:

All purpose flour
¾ cup
Baking powder
½ tsp
Baking soda
½ tsp
Salt
a pinch
Powdered sugar(see note below)
¼ cup+ 2 tblsp
Butter melted
¼ cup
Vanilla essence
1 tsp
Yogurt
¼ cup
Milk
¼ cup
Jam
¼ cup

Method:

  • Preheat oven to 180 º C.
  • Whisk the flour,baking powder,baking soda and salt in a bowl.Mix the sugar and keep aside.
  • Mix the melted butter,vanilla essence,curd ,milk in another bowl
  • Add the wet ingredients to the dry ingredients and mix it lightly till the wet and dry ingredients are combined.No need to beat.
  • Now add the jam(dilute with little lemon juice if you find it very thick) to the batter and make swirls with a fork.
  • Divide the batter evenly on the muffin pan lined with paper liners.If needed,add some more jam on the top and make swirls.
  • Bake in preheated oven at 180 ºC for 15-20 mins till a toothpick inserted comes out clean.
Note:
  • Adjust the sugar quantity based on the sweetness of the jam used.

  11. Yogurt seems to have worked perfectly! The muffins look super soft and definitely didnt need extra color! They look nicely browned and swirled .
